Companies like HMSHost must bid on the space they want, providing complete documentation of the financial, legal and operational aspects of their proposed restaurant concepts.

The projects themselves are massive propositions that can span up to 250 pages and often take dedicated teams two months to produce. They come with rigorous requirements for even the smallest details and, should you mistakenly miss a form or signature, your two-month investment will go directly into the trash. Creating these projects requires pulling together content from various HMSHost departments, ensuring that everything conforms to airport panel guidelines, coordinating photographers and printers, taming massive design files, tirelessly copyediting, and above all else, creating a comprehensive vision that pulls the whole thing together into one financially savvy and totally irresistible package. That package needs to be both a business plan and an advertising pitch; it must be as informational as it is captivating.
